Peach Caprese Salad

I know what you are thinking- Peaches and Cheese?  Peach Caprese?  Where are the tomatoes?
Well friends, don't knock it until you try it.  We found it to be the perfect summertime dinner accompaniment.  When peaches are in season and they are fresh, there is nothing better.  Then pair those fresh peaches with buffalo mozzarella or bourratta and a slice of basil and it is pure paradise in your mouth.

This recipe, too, could not be more simple.  

4 large peaches
2 balls of either buffalo mozzarella or bourratta 
1 large bunch of basil
Balsamic Syrup/Glaze for drizzle
Salt and Pepper to taste


Slice peaches into rounds and place on platter
Slice cheese into rounds and place on peach rounds
Top each cheese and peach stack with a piece of basil
Drizzle Balsamic Syrup over platter
 Sprinkle salt and pepper to taste
*You can find Balsamic Syrup/Glaze in the same aisle as Balsamic Vinaigrette and Olive Oils/Dressings
