Craving
I have been craving red meat recently but always limit that consumption for health reasons. When I do indulge, I will make steaks for the fam. I start by sauteing them in some butter and shallots to seer them and then throw them in a very hot oven for a few minutes to finish them up.
I am also craving the warm weather...I feel it is so close that I can taste it- ha!

Planning
College visits...trying to stay calm and enjoy this time but to be honest my emotions have been all over the place...some days excited...other days stressed...I am sure so many of you can relate...we saw two local schools last year but Diana does not want to apply to either one....we are checking out The University of New England next week and then The University of Georgia in April as well as Clemson University and the University of South Carolina at the end of April Break. I am also going to try to schedule visits to Coastal Carolina University and the University of Tennessee as well as a few more local schools over the summer.
Appreciating
This time of sports...they have helped to make this cold winter really fun...we have thoroughly enjoyed and appreciated seeing Diana cheer at the basketball games and seeing Eva play hockey. As we move into the spring, Diana will be working out at ECE (local cheer gym) and Eva will move out to the softball field...looking forward to that for sure!

Holly, I'm with you wishing for warmer weather and using the grill for steaks and burgers. I will have to say that visiting colleges and the whole process is stressful. It sounds like you all are very organized about it and have a plan. Good luck.
Oh those recipes all look so good! I was really craving red meat last week so talked my husband into dinner out; I have not been liking the 1/2 cow we bought last year at all (I swear it's the taste difference from silage/grain feed versus grass fed but maybe it's just in my head?)... so I've been eating pretty much zero red meat for like a year now.
You have so many good things to look forward to! Yes, the whole college process/visiting/decision making is daunting but I think these visits will be core memories that you get to make with Diana- she will remember them forever and the huge role you played in her future plans. All the upcoming sporting events sound fun and definitely something to look forward to!

That whole college application/decision process is stressful for all, plus I feel like your kids sense they need to pull away a little bit, but also want to curl up beside you some days. Their emotions are all over the place too. I will say the build up to their departure is worse than their actual leaving. Also!! I live a hop, skip, and a jump from Clemson (on the nearby lake-Keowee). I get my haircut, go to the dr, shop, etc there regularly...if you need a break, have questions about the area, or want to meet for coffee/wine I'm available. I will tell you Clemson is truly like a family and the sports are so much fun! It's a great environment. Feel free to message me...jdpres07@googlemail.com
