Quinoa Walnut Salad






Mel Larson does it again.  Mel is the writer of The Larson Lingo, my favorite blog!  Her Summer Salad Swap is back and I decided to post this salad that I made a few years ago.  I think quinoa is still being discovered out there but it it bound for stardom with its health benefits and delicious taste!

Quinoa Walnut Salad

1 cup quinoa


1 cup dried cranberries



1 cup frozen green beans, defrosted



1/4 cup walnuts, chopped



1/4 cup green onions, sliced



1/4 cup balsamic vinegar



1 1/2 tablespoons olive oil



4 cloves garlic, minced



1/2 teaspoon salt



1/4 teaspoon pepper



Combine quinoa with 2 cups water in a medium saucepan and bring to a boil over high heat. Reduce heat to a simmer, cover, and continue cooking until all water is absorbed.



In a medium bowl, combine cooked quinoa, dried cranberries, green beans, walnuts, and green onions until well mixed. In a small bowl, whisk the balsamic vinegar, olive oil, and garlic until well blended. Pour over the quinoa mixture. Toss until well blended. Season with salt and pepper, to taste. Chill in the refrigerator for at least 30 minutes before serving

Lobster always makes Daddy feel better (especially this year with the awesome prices- $3.99 per lb at Market Basket!  We are fascinated with the story of how warm the waters have been this year so the lobster shed their hard shells much earlier and the supply is much great -we will take it!)

Weekly Gratitude



So so so thankful that my husband's surgery was successful and he is healing nicely



So thankful for our supportive family and friends who have helped us during this chaotic time



So thankful for this last year of professional rewards

 So thankful for a special "girls" day with my Diana...mass and the beach...she truly was my little sidekick and didn't miss a beat!

So thankful for the next chapter we are starting...

*Daddy did great!  Winchester Hospital took very good care of him and calmed our nerves- he is resting at home-we are managing his pain and taking good care of him!
