What We're Eating This Week
Monday- Air Fryer Chicken Breasts, Broccoli, Mushrooms and Steamed Brown Rice (I have been obsessed with our air fryer lately- have been throwing everything in there- chicken gets crispy and stays moist- it is genius!)
Tuesday- Egg Roll In A Bowl (find the recipe HERE ) for M&D and Chicken, Veggie and Rice Skillet for the Kids
Wednesday- Chicken Burgers and Sweet Potato Fries
Thursday- Breakfast for Dinner- Pancakes, Eggs, Chicken Sausage and Berries
Friday- Pasquale's Takeout

It has been a quiet and cozy winter for obvious reasons...

Diana has been working hard on her piece for YAGP- the competition was postponed and will now be happening later in March in Worcester, MA- fingers crossed!
We had a fun night with the Fourniers...
and enjoyed the annual School Deliberative Session...
Saturday Morning Date Walks have continued!
We went bowling with our Dance Pals...
Diana has enjoyed learning how to bake and cook in her FACS class
We celebrated Valentine's Day
We celebrated Fat Tuesday with our very first King Cake!
and we committed to our sacrifices for Lent and got our Ashes
We have been working through this challenging year of in-person school that sometimes flips to hybrid and sometimes flips to all remote- trying to ride the wave without getting too stressed but easier said than done for sure :/
What I'm Dreading
Nothing...just soooo looking forward to Spring already!!

1. My career - always re-assessing and seeing bigger and better things ahead!
2. My fitness and overall health- can't wait to update you all soon!

We are all caught up on The Crown
We are all caught up with Big Sky now too- can't believe this show is on Prime Time- it is thrilling-racy- dark- a must see! It is returning for the rest of Season 1 (6 more episodes) in Mid April
and other than that, I continue to binge Smash every chance I get ;)

What a difference a year makes! When I see the pre COVID photo at the mall all’s I can think is, they are all so close together. Look at all those people at the mall. How quickly our mindset can change. I cannot wait to go back to normal. In NY we are moving ahead with vaccines. I have an appointment next month, finally being overweight has paid off, ha ha. I think I will feel better being vaccinated, but still need to be cautious. Hoping the girls get back to dance in person soon.
I have been loving my air fryer too! So much you can do with it. :) The rest of your month looks pretty nice too.

Bowling is on my list of upcoming date ideas! We haven't been in over a year, and I miss it. Also, love that you're killing all your 2021 goals and can't wait to read your health update! Sounds like you're off to a great start to 2021. 😊
