Friday Favorites (April 4, 2025)

 


It was a great week this week!  Although it is still chilly here for the most part, spring is in the air and we are gearing up for some exciting times!

We had the final fitting for Diana's dress and she is very happy with the results!

We will grab the flowers for the bouquets next week and also get her to all of her appointments- nails, hair and spray tan oh my! ;)


That's a wrap!  Short and Sweet this week!  We are in Athens Georgia and about to attend College Tour #4 at the University of Georgia!  Woohoo!

Wednesday Hodgepodge

 




Hi Friends!  Happy Wednesday!  I am here with Joyce for her fun weekly linkup...we are answering the questions below so let's get to it!

 


1. No foolin'! April is here. What's one fun thing on your April calendar? 

 Junior Prom for Diana- can't wait!

 


 

2. It's often said, 'A fool and his money are soon parted'...what's the last thing you wasted money on?

Cable TV- we just switched to Amazon Fire TV and can't believe we didn't do it sooner- fraction of the price and still many options- our friends recommended it and it has been great


 

3.  April 2nd is National DIY day. Are you a do-it yourself kind of person or maybe you're married to one? If so, what's the last thing you DIY-ed. If you're not a DIY-er what's the most recent job you had to hire someone to complete? 

 I am typically not a DIY-er, however, last weekend I was able to add some fabric to a console we have in our entry way.  It blocks out the pictures and decorative items we have stored in there and it came out great!  I also like to make flower arrangements to brighten up the house...will be putting several together over the next few weeks for prom and Easter :)

 





4. Do you eat lamb? If so do you have a favorite dish that calls for lamb? 

 

We liked an occasional lamb chop on the grill in the summer- or lamb tips- I like them with a Greek seasoning and My Father In Law already agreed that the lamb tips have to be our first meal on the grill this summer :)

 


 

5. Do you fit a stereotype in some way? Explain.

Hmmm...I am not sure...you tell me?!  Working Mom...Helicopter Mom...Cheer Mom...Hockey Mom...Windham Mom...Headhunter...Realtor...oh the possibilities are endless....whatever stereotype I fit or people think I fit is fine...I know, in my gut, that I don't take myself seriously and know they don't really matter

 

 

 

6. Insert your own random thought here. 

 

I have an exciting week on tap- I am attending a career day at WHS with my colleague and bestie Janie- we will be talking to some senior students about our careers and industry and hopefully getting them to talk and ask us questions.  On Thursday evening, Diana and I are flying down to Georgia and touring the University of Georgia- Go Bulldogs :)  On Friday night we are celebrating my bestie Lea's birthday- excited for all of this action this week!

Pastina!

 




Oh friends!  This one brought back too many memories and I was thrilled that my girls love it just as much as I did as a kid.

 

Pastina was given to us when we weren't feeling well or just needed to warm up or just because we were hungry.

 

I remember eating it at my aunt's house with my cousin- we couldn't get it enough!

 

I decided to try making it and it became an instant hit.  Sharing the recipe with you below.

 

Disclaimer: I have doubled or tripled my recipe in recent weeks because the girls are demanding leftovers...ha!  Hope you try it and enjoy

 

 

Ingredients  

½ cup Acini di peppe or any tiny pasta shape.
 1 ½ cups Chicken broth 
cup Parmesan cheese finely grated 
Egg 
1 tablespoon Butter 
Pepper to taste Optional

Instructions 

In a sauce pan add the chicken broth and the pasta.

Cook the pasta over medium heat for about 8-10 minutes until most of the liquid has been absorbed and pasta is al dente.
In a bowl, whisk the egg and parmesan cheese until you get a uniform paste.

Remove the pasta from the heat and use a whisk to stir the pasta as you add the egg mixture.
Add the butter and keep stirring until it has dissolved.

Sprinkle more parmesan cheese and pepper. Serve and enjoy.
