Lobster Roll Sliders



If you're like me than you LOVE seafood and especially lobster.  One of the reasons I love being from and living in New England is that we are so fortunate to have the best and the freshest seafood around...right at our fingertips!


We have compared many lobster rolls over the years and we have come to the conclusion that the two best are from 

1. The Beach Plum- North Hampton NH and
2. Lobster Tail- Windham NH


Both restaurants have been awarded this prize over the years and Rob and I completely agree!

 I decided to create my own version, in the form of sliders for a ladies lunch and I wanted to share the recipe with you.  They are the perfect solution for the taste and luxury of lobster with not the normal amount of calories of a full lobster roll.

Here it goes....



Ingredients:

2 lbs lobster meat
10 slider rolls
2 tbls mayo
1 Tbls Everything But The Bagel Seasoning
2 Fresh Chives, chopped
1 Tbls Fresh Parsley, Chopped 
Toothpicks and/or Mini Dill Pickles for Garnish


Instructions:

Chop lobster meat into bite size pieces
Mix lobster with mayo, chopped chives and chopped parsley
Sprinkle with seasoning and mix
Slice open your slider rolls
Scoop a spoonful of the lobster salad into each roll

You can secure with toothpicks for easier handling and to make them more eye appealing

You can add mini dill pickles to the toothpicks for an extra cute touch and for an extra bite!

Refrigerate until ready to serve!
