Italian Wedding Soup

I am joining the fun with Soup's On over at The Larson Lingo

My contribution will be Italian Wedding  Soup- what else!


Ingredients
Meatballs:
  • 1 small onion, grated
  • 1/3 cup chopped fresh Italian Parsley
  • 1 large egg
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 slice fresh white bread crust trimmed, bread torn into small pieces
  • 1/2 cup grated Parmesan
  • 8 ounces ground beef
  • 8 ounces ground pork
  • Freshly ground black pepper
Soup:
  • 12 cups low-sodium chicken stock
  • 1 pound curly endive, coarsely chopped (1 pound of escarole would be a good substitution)
  • 2 large eggs
  • 2 tablespoon freshly grated Parmesan, plus extra for garnish Salt and freshly ground black pepper
Directions
To make the meatballs: Stir the first 6 ingredients in a large bowl to blend. Stir in the cheese, beef and pork. Using 1 1/2 teaspoons for each, shape the meat mixture into 1-inch-diameter meatballs. Place on a baking sheet.
To make the soup: Bring the broth to a boil in a large pot over medium-high heat. Add the meatballs and curly endive and simmer until the meatballs are cooked through and the curly endive is tender, about 8 minutes. Whisk the eggs and cheese in a medium bowl to blend. Stir the soup in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin stands of egg, about 1 minute. Season the soup to taste with salt and pepper.
Ladle the soup into bowls and serve. Finish soup with parmesan cheese if desired.

Sunday meant birthday party extravaganza...first Baby Brian's party...


and then time for Cousin Tyler's party....we all had a great time catching up with fam




Monday morning...back to the routine...mass before work is how I start my week

Tuesday we had a fun contest in the office...the girls LOVED their prizes...a day off...lunch...gift card...candy...

Needed a new pair of jeans...ended up getting Diana some cute bathing suits :) (funny thing about this picture is that some woman thought I was taking her picture...I was giggling to myself)


Ash Wednesday- that's all

A surprise in Wednesday's mail- so proud of my hubby- manages to get stellar grades while producing at work AND managing our crazy busy family life!


and my football parent friends and I have successfully made Jaguar Football an all year sport...we have started planning and executing on next season...let the festivities begin!


Great week...look forward to catching up on everyone else's weeks too!

Ash Wednesday

...and so my favorite period of the year in church begins today...again, I will give up chocolate for the next 46 days as that is a big sacrifice...but I will also, during this lenten season reflect and repent, sacrifice and exercise self-control...I am making a conscious effort to be an even better Catholic.

I attend mass every weekend as well as one week day per week but I am going to try and make some extra visits and also attend the special events in my church over the next month or so...like the stations of the cross and prayer groups.

Nothing has provided me with more clarity and more hope and renewed faith then my catholic religion especially over the last few years.  It is time I give back to God.

Friday Frolic

 
I wanted to take this chance with Frolic Friday over at Pocket Full of Pink to show off
all of the yummy treats I made and put together for Monkey's little Valentine swaree :)
 
Chocolate Dipped Pretzel Rods
 Super Easy!  I buy the Baker's Dipping Chocolate Cups- melt the chocolate- dip the pretzels, one at a time in the melted chocolate and then shake different color sprinkles on them- lay on wax paper until dry and set and VOILA!  (you can do different colors for any party theme or holiday)
 
 
Valentine Cereal Cups
Big hit with the kiddos!  Another easy crowd pleaser.  I mixed Multi-Grain Cheerios, Strawberry Frosted Mini Wheats and Valentine M&Ms- festive and a slightly healthier snack option ;)

Veggie Tray with Hummus for Dipping

 Arranged the veggies on a heart shaped platter for our valentine party


Strawberry Salsa with Blue Corn Chips
 This was a big hit for one of my girls' nights in see the other fun recipes etc HERE...my BFF Cass loves this and I thought it was an appropriate and festive snack...I love to serve this salsa with blue corn chips
Here is the recipe!
Ingredients:
1 English or seedless cucumber, finely chopped
1 thinly sliced green onion
1 Tbsp cilantro, cut into strips
3-4 Tbsp seasoned rice wine vinegar
2 cups fresh strawberries, hulled and diced small
1 yellow pepper

Directions:
Mix cucumbers, green onion, cilantro, vinegar, and pepper. Cover and chill at least one hour.

Just before serving, add strawberries.


Pineapple and Cream Cheese Bites
 Pretty self-explanatory: I took pineapple chunks and rolled pieces of cream cheese into balls. I put the cream cheese balls on top of the pineapple chunks and stabbed them with mini pretzel rods to hold them together...another healthier option for kiddos


Valentine Rice Krispee Treats

I made homemade Rice Krispee Treats and cut them into some fun shapes.  I then got some red and pink frosting (yes in a can- ha ha!) and decorated them to make them super festive


and no kiddy Valentine party is complete without Jello Jigglers
There are several jiggler recipes on line
I substituted lemon flavored pudding for the vanilla and they came out great!
